Kim-chilla-dilla

I’ve been looking for a new way to spice up my quesadillas and I think kim-chi is the ticket. I got this kim-chi from Costco. I think it’s some of the better kim-chi I’ve had in a while. It has a nice crunch snap and tastes nice and peppery/fizzy.

I was out of plates so I had to do all the construction on the cutting board. I made sure to get the cheese out early so it could start coming up to room temperature.

Finished the construction then threw it back in the pan. I almost forgot to take a picture of it with the cheese (Kirkland Mexican Cheese) added. I’ve been using vegetable oil instead of butter lately. I can’t really tell the different flavor wise and I think the oil gets a better texture.

I’ll cook it on one side, then flip it over and add cheese to the hot side. That way the cheese melts and little and adheres to the tortilla.

I roll it over as fast as I can then do my best to wait until it releases cleanly from the pan. CHEESE CRISPIES FOR LIFE.

Didn’t take any pictures of the final product because I was starving. I cut it up into 4 pieces then place it on a paper towel to keep it from getting soggy.

I thought it was okay. If I did it again I’d add more kim-chi.
