I swapped the fresh onion and garlic for powder to allow for vacuum sealing. I also didn’t have Colby cheese, so I used cheddar cheese.

Put in a bag to freeze for an hour to get them solid enough for vacuum sealing later
Freeze until ready to eat
Sous vide at 145F for 1 hour and 30 mins
Sear on high heat
Add buns
